 Grandma Pfeilsticker’s Favorite Recipes….




OATMEAL CHOCOLATE CHIP CAKE

1 ¾ cups boiling water                                        1 ¾ cups all purpose flour 
1 cup uncooked oatmeal                                     1 tsp baking soda
1 cup packed brown sugar                                 1 tsp baking powder           
1 cup sugar                                                           ¼ tsp salt              
½ cup butter or margarine softened                  1 pkg (12 oz) chocolate chips
3 eggs divided                                                       ¾ cups chopped walnuts


In a mixing bowl pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, mixing well after each addition. Sift flour, soda, cocoa and salt together. Add to batter. Mix well. Stir in half the chocolate chips. Pour into greased 13 x 9” pan. Sprinkle top of cake with walnuts and remaining chocolate chips.  Bake at 350 degrees for about 40 minutes.

 

HEARTY POTATO SOUP

6 medium potatoes, peeled and sliced              6 Tbsp butter or margarine
2 carrots diced                                                      6 Tbsp all-purpose flour    
6 stalks celery diced                                            1 tsp salt
2 quarts water                                                       ½ tsp pepper
1 onion chopped                                                  1 ½ cups milk

 In a large skillet, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain reserving liquid setting the vegetables aside. In the same kettle sauté the onion in butter until softened. Stir in flour, salt and pepper; gradually adding milk.  Stir constantly until thickened. Gently stir in vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency. Yield 8-10 servings (about 2 ½ quarts)                                                              

MEAT LOAF

2 lbs ground beef                                              1 cup bread crumbs
Onion                                                                  1 cup milk or tomato juiceParsley                                                        1 beaten egg
                                                                              Salt and Pepper


Mix all together. Pack in a loaf pan and bake.  Tomatoes may be poured on top while baking. 350 degree oven. 1 ½ hours

 

BREADED PORK CHOPS

Beat up egg. Add salt and small ½ cup of milk. Dip chops in this and then roll in crushed cracker crumbs.  Place in baking dish and bake in slow oven until done.

 

SIX CUP SALAD

1 cup sour cream
1 cup cottage cheese
1 cup diced pineapple
1 cup fruit cocktail
1 cup coconut
1 cup small marshmallows
½ cup nuts and cherries

Drain fruits and combine all ingredients except nuts and cherries.  Chill.  Can be served on lettuce with nuts and cherries as a garnish.

BBQ Pork Chops

6 Pork Chops                                                        1/2 cup brown sugar
2 tsp chili powder                                                 1 /2 cup vinegar
1/2 tsp paprika                                                      1 can tomato soup

 Put chops in baking dish. Mix the remaining ingredients and pour over pork chops. Bake 1 1/2 hours at 300 degrees.

 

Spoon Burgers

1 1/2 lbs hamburger                                             2 tbsp mustard
1 can chicken gumbo soup                                 3 tbsp catsup
1 tsp diced onion                                                  1/2 soup can of water
salt & pepper to taste.

 Brown hamburger and onions.  Add all other ingredients and cook over low heat until it thickens enough to spoon into hamburger buns.

 

Rice Krispies Bars

1/2 cup of oleo (butter)                                       1 tsp vanilla
3/4 cup white sugar                                             3/4 cup flour
2 eggs                                                                    2  tbsp cocoa                 
1/4 tsp baking powder                                        2 cups small marshmallows

Mix together in order given except marshmallows. Pour in 9 x 13 greased pan.  Bake 10 minutes at 350 degrees. Do not over bake. Remove from oven.

Sprinkle on the marshmallows. Bake for 3 minutes. Cool.

 

Frosting

1 6oz. pkg. choc. chips
1 cup peanut butter
1 1/2 cup of rice krispies

Melt chocolate chips and peanut butter. Add rice krispies. Spread on the baked mixture.
